Is there a way to figure out torque/HP with an access port?

the only way is to datalog carefully under specific conditions and plot is with vdyno software. You can search vdyno thread to figure out how to do it. At the end of the day, it is more usefull to compare the same car tested at the same place against new modifications than comparing different car at different places because the power units have some difference according to different conditions and cars.
You have other device that read g-force or or calculator that estimate hp based on the time it takes to accelerate a specific mass but all of them are affected by measuring parameters. The best way is to put 2 car side by side on a track or strapped on the same roller back to back.

Take a wot log and bake it in the oven @350f for 35 mins. Let cool off and cover in chocolate frosting. Make sure to let it cool before frosting it or it will rip and crumble.

More specifically, let it cool slowly at room temperature. I cheated and put it in the fridge. Now I have low compression in cylinder 4.

If there is, it would be terribly inaccurate. You can, however, as stated, datalog the correct PID parameters and run it through Virtual Dyno with a 1.01 correction factor and get a general idea.
