Default 225-45-18

So there has been much discussion about the largest tires you can put on stock rims with no touching.... 225-45-18 have been said to be safe.
I just order and installed some continental extreme contact 225-45-18. Fantastic tires, but I am touching on deep dips and bumps on hard corners. The touching seems to be on the inside as I cannot see any marks from the outside.
I have decided to get some smaller tires because I do not feel like dealing with the touching issues.
Will it be better/safer to go with 225-40-18 or the stock 215-45-18 to have no touching issues??
